Taco Bowls for Two

This recipe for taco bowls is naturally gluten free and can be dairy free as well if you omit the sour cream (or yogurt). I recommend making them for dinner, but honestly they would make a delicious lunch as well.

Tacos. Taco Bowl. Taco Salad. Burrito Bowl. Call it whatever you want. I can’t quite pinpoint the day I realized tacos were one of my favorite foods, but let me tell you this: my taco love runs deep. And while we definitely have “taco night” with homemade tacos from time to time, we’ve found ourselves making taco bowls far more frequently. They’re quick to make, extremely satisfying, and usually prepared from a small list of pantry ingredients. Not to mention they are naturally gluten free!

Taco bowls: meatless (or not), with guacamole (or not), and with plenty of cheese (always). Perfect for dinner tonight.

Weeknight Taco Bowl for Two

Servings
: Two

Time: Approximately thirty minutes

Ingredients

1-2 tablespoons Olive oil

14oz can Pinto Beans (drained and rinsed)

1 yellow onion (1/4” dice)

1 teaspoon Cumin

1 teaspoon Chipotle Powder

Salt and pepper to taste

Juice of 1 lime

One head of Romaine lettuce (shredded)

One Roma Tomato (diced)

One Avocado

Shredded cheese

Sour Cream (or Greek yogurt)

Cilantro (chopped or whole)

Fritos or corn chips (for crunchy garnish)

Preparation

  1. In a small saucepan, sauté the onion with cumin, chipotle powder, thinly sliced cilantro stems, salt, and pepper in the olive oil stirring occasionally until translucent and slightly browned.

  2. While the onions sauté, mash the avocado with ¼ of the lime juice in a small bowl and add chopped cilantro. Salt to taste.

  3. Add pinto beans and remaining lime juice to the saucepan and simmer just until heated through.

  4. Build your bowl! Start with a bed of lettuce and top with beans, tomato, avocado, shredded cheese, and a dollop of sour cream (or yogurt), then garnish with cilantro leaves.

  5. Top the bowls with a handful of Fritos or your favorite corn chip. This adds a wonderful, salty crunch to every bite.
