Shrimp Scampi Pizza

This recipe for gluten free shrimp scampi pizza is made gluten free by using a pre-made gluten free crust. However, you are welcome to make it with a from-scratch crust, but the time will be increased. This pizza is the best weekend treat or really any night of the week. It takes the best part of shrimp scampi, the shrimp, and puts it on a pizza crust with loads of mozzarella, and plenty of garlic. It’s a major dinnertime success, every time.

A couple summers ago we embarked on making this shrimp scampi pizza because I had a craving for Italian food, but not quite a big bowl of pasta. The night called for something quick, but extremely delicious. We decided on pizza because we had a frozen crust in the freezer, as well as shrimp, and all of a sudden our favorite pizza, ever, came to exist.

Shrimp scampi is a favorite of ours and so why had we not thought to turn it into a pizza? It’s so easy! Our version has two types of cheese, fresh tomatoes, and a lot of garlic. We hope this shrimp scampi pizza makes everyone smile upon their first bite.

Shrimp Scampi Pizza

Servings: Two, maybe Four (how hungry are you?)

Time: Thirty minutes (plus time for oven to pre-heat)

Ingredients

1 Gluten Free Pizza Crust (our favorite crusts are by Zeia Foods and Against the Grain Gourmet)

2 tablespoons Olive oil

Lots of minced Garlic (about 4 cloves for the shrimp and one more for the pizza!)

1 pound of Naked Shrimp from North Coast Seafoods fully peeled and de-veined

A handful of chopped parsley

1 teaspoon red pepper flakes

Juice of ½ lemon

12 ounces shredded mozzarella (we like it cheesy)

2 ounces feta cheese (we really love cheese)

1 Roma Tomato (diced)

Preparation

  1. Preheat pizza stone in oven at 450F for at least 15 minutes after the oven indicates it is preheated.

  2. While the oven preheats, heat oil in a cast iron pan over high heat until it shimmers, then sauté the shrimp, garlic, red pepper flakes, salt, and pepper until the shrimp are just slightly underdone (not completely pink).

  3. Add lemon juice and a handful of parsley and stir, then remove from the heat.

  4. Build the pizza starting with a thick layer of cheese, then evenly spread the shrimp across the surface, and sprinkle evenly with tomato, fresh garlic, and a bit more parsley. Top with feta cheese and minced raw garlic.

  5. Slide the pizza directly onto the pizza stone and bake for 15 minutes (the crust should be crispy, and the cheese should be browned and bubbly). 

  6. Very carefully remove the pizza stone from the oven and place on a heatproof surface, then transfer the pizza to a cutting board, slice, and serve! (if you have a pizza peel (you fancy person you) you could use that to remove the pizza from the stone in the oven, but we use a couple of large spatulas and have success.)

Note: In these photos, we garnished our pizza with garlic scapes as they were in-season, but feel free to leave them out and just use minced garlic.
